I think Thor is a good way to learn about subtractive synthesis. It's very modular, so you can start simple - a single oscillator - then gradually add more components and complexity.

I really like the composition, especially with the modified chromatic phrases. Reminiscent of Yann Tiersen in a good way.

That sounds like the rack is working as expected. The Motif uses USB only for MIDI data, not audio. You'll need to connect a set of audio outputs from the Motif to the inputs on your sound interface in order to use it within Reason (or any other DAW).
