I sometimes use it, in smaller amounts, for modulating the pitch of an oscillator (or several oscillators).
You could also use it to modulate the frequency/cutoff of a filter, i.e. a bandpass filter set to high resonance and keyboard tracking, for certain specific sounds.

And now with real analog hardware, as eXode stated, there comes a lot more into consideration generating the final sound. Even if the synth gets "warmer" over time, the sound changes and its probably more than just a boring drift. Yeah the other side to this is analog and it almost deserves its own...
